The south-western Japanese island of Kyushu boasts rustic allure and old-world charm. Never mind if you can't visit it, because you'll find the same winsome appeal at Hakata Nihon Ryori, with its authentic Kyushu-style food.

This cosy, one-year-old eatery serves a huge assortment of more than 200 Japanese delights, including fresh sushi and a la carte dishes ($12-$20).

Having learnt the ropes from a Kyushu chef 20 years ago, boss-cum-chef Mr Steven Liaw can whip up any Japanese fare with flair. In particular, the 47-year-old also serves up some mean Kyushu-inspired ramen.

Its essence lies in the thick and nourishing soup, brewed with pork bones for more than 10 hours. I found myself relishing every spoonful of the flavoursome Tonkotsu (pork) Ramen ($10-$12) to the last drop. The health-conscious will be pleased to know that it's generously peppered with bean sprouts, seaweed and sesame, so you can be sure you're taking in lots of nutritious stuff.

A couple of side dishes also tantalised my taste buds. The Buta Kakuni ($8), a lovingly-prepared braised pork dish, may look similar to the Chinese-style claypot delight. But upon sinking my teeth into the tender, multi-layered meats, I was full of appreciation for its unique flavour, with hints of soya sauce, sweet wine, and rice wine.

The Sanma Shioyaki ($16), grilled seasonal fish air-flown all the way from Japan, also delighted me with its piquant appeal, while Yakiniku Itame ($10), a dish of sautéed sliced beef, was also pretty addictive.

Don't leave without having ordered a sashimi platter ($40 onwards). If you're like me, you'll most likely be in ecstacies over the fresh and sweet-tasting scallop, salmon, prawn, hokkigai (clam), snapper, tuna, and squid.
